I Yam What I Yam

The yam is among the most ignored of fruits vegetables tuber thingies. Gaining respect only around the holidays as a butter and sugar coated side dish, a racer should embrace this fruits vegetables tuber thingy as a highly nutritious source of orangy stuff when served bereft of fats and monosaccharides.

Ingredients:

• 2 medium "don't call me a sweet potato" yams
• 10 cups boiling water

Put water in large pot and bring to a boil. Drop yams in and cook anywhere from 5 minutes to an hour, depending on whether or not you have teeth. Or, simply cook until skin splits and the house smells funny. Add a festive holiday garnish if it happens to be that time of the year and present proudly; otherwise, sit quietly in a corner away from the family and enjoy.
